POKOTABI / Ramen-ya Suzu
らぁ麺や すず
A look at Ramen-ya Suzu near Yako Station, from sweet back fat and ginger shoyu to dried sardine and chicken broths, paired with hearty rice bowls.
01 / ABOUT THE PLACE
A rich base of dried sardines and chicken bones meets the sharp snap of fresh ginger and the mellow sweetness of pork back fat in the seabura ginger shoyu ramen. At Ramen-ya Suzu near Yako Station, the ticket vending machine presents a broad spread of bowls to suit any appetite, from deceptively light broths that defy their rich appearance to varieties that put seafood aromatics front and center.
The seabura ginger shoyu ramen is one of the shop's signatures: luscious back fat coats chewy, thick noodles, while the clean ginger cuts through the richness for a remarkably refreshing finish. For the full experience, the "all toppings" option piles the bowl high with seasoned egg, chashu pork, bamboo shoots, diced raw onions, and iwanori seaweed. The crisp bite of the onions and the briny aroma of the rock seaweed continually shift the profile of the broth as you work your way through.
At lunchtime, weekday-only sets pairing ramen with mini rice bowls are a popular staple. Robustly seasoned sides such as the green onion and salt cubed chashu bowl or the seared chashu bowl pair naturally with the soup, and regulars often tweak their bowls using the vinegar and garlic on the counter.
Inside, the layout accommodates solitary diners at the counter as well as groups at comfortable table seats. With children's ramen and small drinking snacks on offer, the shop settles easily into everyday dining, from a quick weekday lunch to a relaxed weekend family meal.
